Broccoli Cauliflower Bacon Soup
This soup is an AWESOME way to sneak in more veggies into your diet. I followed the recipe from Practical Paleo found here. After I was done cooking the bacon, I sauteed a bag of broccoli slaw in the bacon fat and then added that to the soup to give it more texture. We served the soup along side some shaved beef (beef that's sliced thin, think Philly cheese steak style) and Matt, who loves to mix things together, had the genius idea of putting the beef into the soup. SO GOOD! In fact, when I eat the leftovers of the soup, and any time I make it in the future, I will definitely be adding some kind of meat to it. The bacon gives it a good flavor, but the meat in the soup tastes divine!
