Avocado Chicken Salad

Day 6 Paleo Recipe

     Quick and Easy Lunch!  This is an easy recipe if you've got some leftover chicken in the house.  It uses NO mayonnaise - store bought mayo is not paleo, but you can make your own paleo mayo!  Eat this plain, or scoop it into a lettuce wrap for a delicious meal on the go.




 Ingredients:

  • 8-10 oz of cooked chicken (diced or shredded, I like mine shredded)
  • 1 avocado
  • Juice from 1/2 lime
  • 1-2 Tb fresh chopped cilantro
  • Salt to taste

 Directions:


  1. Cut the avocado in 1/2, remove the pit, then use a big spoon to scoop it out into a medium size bowl.
  2. Using 2 forks, "chop" the avocado into small pieces (it will get kinda mushy)
  3. Squeeze in the juice from 1/2 a lime.
  4. Add the chopped cilantro and salt to taste.
  5. Add the diced or shredded chicken and mix it all together!
  6. Enjoy as a scoopable salad, or wrap in a lettuce leaf as a meal on the go.
