Day 6 Paleo Recipe
Quick and Easy Lunch! This is an easy recipe if you've got some leftover chicken in the house. It uses NO mayonnaise - store bought mayo is not paleo, but you can make your own paleo mayo! Eat this plain, or scoop it into a lettuce wrap for a delicious meal on the go.
- 8-10 oz of cooked chicken (diced or shredded, I like mine shredded)
- 1 avocado
- Juice from 1/2 lime
- 1-2 Tb fresh chopped cilantro
- Salt to taste
Directions:
- Cut the avocado in 1/2, remove the pit, then use a big spoon to scoop it out into a medium size bowl.
- Using 2 forks, "chop" the avocado into small pieces (it will get kinda mushy)
- Squeeze in the juice from 1/2 a lime.
- Add the chopped cilantro and salt to taste.
- Add the diced or shredded chicken and mix it all together!
- Enjoy as a scoopable salad, or wrap in a lettuce leaf as a meal on the go.
