Day 5 Recipe
We are 5 days in now, and for those of you who have done this before or already follow the paleo template this may not be to big of a system shock. For those of you who are trying paleo for the first time, most likely you are in the midst of sugar and grain "detox". You have taken the sugar out of your body and now you crave it - you are in "withdrawal".
Never fear! One of the things I find really neat about the paleo diet is that you learn to replace things that are bad for you (i.e. pasta, bread, rice, grains) with things that are good for you (i.e. VEGGIES and some nut flours). And speaking honestly, in most cases I either can't taste a significant difference, OR I even start to like the veggie version better! The more I reflect back, it's not that the pasta or the bread really tasted all that amazing - it was a vehicle to transport the sauce/main dish to your mouth. For me, pasta was a way to get even more tomato-ey goodness into my belly; rice was always doused in sauce, broth, whatever it was soaking up. Why not replace these foods with something that does the same functional job but actually has nutritional benefits? Thank god for veggies! Zucchini pasta is a miracle worker but that's for another post, another day. Today I am talking about a grain free 'rice'. CAULIFLOWER! Don't be fooled by "gluten free" carb-options in the grocery store. They may be free of gluten, but they are still a GRAIN and are NOT beneficial to your body. They may be easier to digest for those with gluten sensitivities, but still not a great option. DON'T DO IT! Try this instead :)
"EWWW!" That's how I used to feel about cauliflower. I tried it in those frozen bags of mixed veggies, I had a roommate in college who used to eat it mashed up. NOT FOR ME. I was convinced I wouldn't ever like it - the smell, the texture, the flavor. NO! I really wanted to try this paleo orange chicken recipe I had found, so finally I went to the store and picked up that albino broccoli wanna-be. I was WRONG. It was GOOD. I'm not sure I would eat the florets plain, but as rice or mashed 'fauxtatoes' it's so convincing! Take my word, even if you are a hater now, give it a try. You might just change your mind!
This recipe isn't my own, so I will post links to the original - credit where credit is due! I am posting 2 different options, one is a cilantro lime version that goes great with lots of things, not only Mexican-style food. Take your pick, try it out! You can top this off with dozens of tasty things - carnitas shredded beef, orange chicken, pot-roast, stir fry. Basically think of a dish you enjoy with regular rice and try this replacement!

- Note: you can add some garlic cloves in when you cook the cauliflower in the microwave for extra flavor! Keep them in when you put it in the food processor!
- Personally I prefer the cooking method of the above recipe as you cook the cauliflower before you rice it. I then follow this to add the cilantro and lime flavors. However, this is a great option if you don't have a food processor as you can grate the uncooked cauliflower with a cheese grater instead!
